The use of ginseng has a long history. Its use began 4500 years ago and its first record was written 2000 years ago (Baeg, 2013). Ginseng is the most valued health care goods in Asia especially in China and Korea (Baeg, 2013). Ginseng is utilized in food, health supplements, and Chinese medicine etc. (Baeg, 2013).

参有着永久的历史。 人们最早在4500年前就开始用参了,它的记载是在2000年前 (Baeg, 2013)。 参在亚洲包括中国和韩国是最顶级和宝贵的保养品 (Baeg, 2013)。

The cultivation of ginseng is a troublesome process. It requires specific climate and soil conditions, and it is planted for at least 3-4 years before harvested (Baeg, 2013). Ginseng is cultivated in Canada, US, China, and South Korea (Baeg, 2013). Out of these countries China has the most production, followed by South Korea, Canada and the US. The amount of ginseng produced by these four countries contributes to more than 99% of the ginseng produced in the world (Baeg, 2013).

There are three types of ginseng: Panax ginseng Meyer, Panax quinuefolius L and Panax notoginseng Burkill (Baeg, 2013). The majority of ginseng produced in the world is Panax ginseng Meyer (Baeg, 2013). Panax quinuefolius L is produced in Canada and the US (Baeg, 2013).

Panax quinquefolium is native to North America. Ginseng was first discovered by Jesuit priests in Ontario near Lake Huron in the early 1700's. By 1716, the first shipment of root to China commenced, initiating the high respect that the Orient has for Ontario-grown root.

Southern Ontario is the largest producer in Canada. More Asian buyers prefer Ontario-grown ginseng than any other root grown in North America! In fact, the Pacific Rim imports 95% of the root produced in Southern Ontario.

The cultivation of ginseng has long been a precise and careful process. Ginseng is a very high risk crop! The procedures in growing ginseng were developed and improved by the veteran growers near Waterford, Ontario. Ontario growers are conscientious and dedicated producers. They have set standards in the cultivation of ginseng that are being copied, but not matched, around the world.

Ginseng has many health benefits such as the regulation of carbohydrate metabolism and the control of type 2 diabetes mellitus (Vuksan et al., 2000). According to Vuksan et al. when ginseng was taken 40 minutes before the intake of carbohydrate, significant reduction in glucose was observed in both non-diabetic subjects and subjects with type 2 diabetes.

There are increasing evidences on the many other health benefits of ginseng such as the regulation of blood pressure, antioxidant properties, improving cardiovascular function, reduction of platelet adhesion, reduction of cholesterol, improving energy etc. (Zhou et al., 2004). From the published studies involving cell cultures and animal models, ginseng is shown to have benefits on the aforementioned conditions (Zhou et al., 2004).
